“Black tea muffin” recipe
6 muffins.

Material
Milk … 50g
Fresh cream … 10g
Earl Grey … 2g(Tea bags can aiso be substituted)
Egg … 55g
Granulated sugar … 60g
vegetable Oil … 60g(corn oil..etc)
Wheat flour … 90g
Almond powder … 20g
Baking powder … 3g

【Cotta Earl Grey(broken)】
This time,I used “cotta Earl Grey(Broken)”.
【If you are concerned about the leaves,you can also use a tea bag instead.】
※Soak the tea bag in warmed milk and fresh cream to make black tea liquid.After soaking,please squeeze it well.
Get ready
1.Put the eggs at room temperature.
2.Wheat flour,almond powder,and baking powder well with a whisk.
3.Set a glassine case in a muffin mold.
4.Preheat the oven to 170℃.
How to make
1.Add fresh cream and Earl Grey to milk and heat in a microwave oven(600W) for about 30 seconds.
If you substitute it with a tea bag,soak the tea bag in warmed milk and fresh cream to make tea juice.After soaking,please squeeze it well.
If you don’t have fresh cream,you can replace it with milk♪
Change it to”50g of milk + 10g of fresh cream”→”60g of milk”.

Leave it for once and use it in the later process.

2.Loosen the eggs at room temperature with a whisk.

3.Add granulated suger and mix well with a whisk.
Mix thoroughly until it becomes whitish.

4.Add vegetable oil in several portions,and mix thoroughly with a whisk each time.

By bividing it into several times,the number of times you mix it increases and it becomes a fluffy muffin♪

Mix well until it thickens!

5.Add”Milk & Fresh Cream & Earl Grey”in 1 and mix well with a whisk.

6.Add the mixed”Wheat flour & almond powder & baking powder”while sifting,and mix well with a whisk.


After mixing with a whisk until you can’t see the powder,replace it with a rubber spatula and prepare the dough.

7.Divide the dough into 6 equal parts into a muffin mold with a glassine case and pour it in.


8.Bake in an oven preheated to 170℃ for 19 minutes.

※How to identify the baking.
If you bake it for 19 minutes,try to pierce the middle with a toothpick.
♥The point that a little fluffy dough is attached to the toothpick is the sign of the moist muffin baking.
♥If nothing is attached to the toothpick,it is OK.If it is overcooked,it will be dry.
♥If the dough is sticky,it hasn’t been baked yet,so please bake it for an additional 2 minutes!

It’s burnt!
